This sounds like an interesting project. I created the Soils Laboratory Manual, an open lab manual for introductory soil science classes. It’s licensed CC BY 4.0, so feel free to use what content aligns with your project. I share all of the related resources for that lab manual using a Google Drive, which you can request access to on this site: open.soilscience.info. I’m also happy to help out with any soil science content you want to include, or serve as a sounding board since I’ve done this type of project in a closely related discipline.
